Homemade Granola - Gluten-Free, Dairy-Free, and Soy-Free

I had better luck finding Gluten-free oats yesterday at PCC so I made some granola. I am no expert so I just made my old recipe with a couple tweaks to remove the offending foods. Next time I want to try using applesauce and decreasing the oil - some people have blogged that this works for them.

Here is what I made, based on what I had on hand.

Gluten-Free Granola Recipe

Ingredients:
6 c rolled oats (certified Gluten-Free)
1/2 c brown sugar
3/4 c flaxmeal
1/4 c raw sunflower seeds
2 c chopped pecans
2/3 c honey
2/3 c vegetable oil
2 T rice milk
1 1/2 t vanilla

Instructions:
1. In a large bowl combine dry ingredients
2. Combine wet ingredients in small bowl. Add to oat mixture and mix thoroughly.
3. Turn into two large shallow greased baking pans or cookie sheets. Heat in 300 degree oven for 30-40 minutes or until lightly toasted. Stir twice during heating.
4. Let cool for 15 minutes after removing from the oven and then stir again. Store in tightly sealed container.

I so wish my daughter could have oats, as granola is my favorite! We tried the gluten-free kind and she still reacted :(
My goal is to try to make a "granola-like" type of cereal for her without oats...maybe use puffed rice or quinoa.. see if that works for her!
How did it taste?

Hi Julie! Have you tried some of the GF granolas on the market that don't have oats (like Trader Joes). It may provide some inspiration, although I think your ideas are great. How neat it would be to make it out of something so healthy like quinoa.

It was pretty good but not quite right. I subbed in the flax seed meal for wheat germ in the recipe and I think it is too strong or something. I'll try something different next time.

Although I was happy to have it - breakfast is such a tough meal for me.
