In spite of our less than stellar summer weather, I am moving forward on my summer salad plan. I made several salads over the last week so that they would be available for picnics and other outings.
Here is what I have made:
1. Roasted Potato and Tomato Salad (from Moosewood Daily Special)
2. Southwestern Corn Slaw
3. Black Bean and Corn Salad
4. Quinoa and Black Bean Salad (Not pictured)
Salad seems like a great item to investigate if you are gluten-free - there are lots of salads out there that don't even need to be adjusted, you just need to double-check all your ingredients.
