Did you try Van's? I like those. Totally NOT the same as gluten waffles, but not horrible either.
I like the wheat-free flax ones b/c they have a good fiber content.
Also, I'd say after 6 weeks of NO improvement, I'd do a challenge (eat gluten like normal one day) and see how you feel for a few days - worse, same, better, etc.

have you tried Kinnikinnick Waffles? They are pretty good!
